I’ve found that soy yogurt is harder to find these days, and what does exist is not organic and contains sugar, making it not great to use in savory recipes. And a lot of it doesn’t taste good and contains what seems like unnecessary ingredients. So, why not make your own? It turns out that the Instant Pot has a handy yogurt feature to easily do just that! If you don’t have an Instant Pot, you can use a yogurt maker, dehydrator, or some other way to keep it at a good temperature for the favorable bacteria to proliferate. You can make yogurt with just two ingredients: Soy milk and probiotic powder!

The Instant Pot is very handy for making beans from scratch, soups, stews, chili, squash and more! It’s very handy that it has the yogurt feature as well!

Why Use Soy Milk to Make Yogurt?

When I buy nondairy milks, I like to purchase the one with the simplest, most natural ingredients, so for the last few years I have stuck exclusively to Trader Joe’s or WestSoy Organic Unsweetened Soy Milk. They are probably the same thing (Trader’s buys from other companies and adds their branding). It’s a great source of plant-based protein. Most other common non-dairy milks seem like “fluff” to me — just a bunch of sugar and extra ingredients,without much nutrition. I have heard that many almond milks, actually contain very little almonds. Besides, soy milk makes great homemade yogurt!

Culturing

I have tried a few different ingredients to turn milk into yogurt: store-bought yogurt, a culturing product, and probiotic powder (or capsules). By far the easiest and best seems to be the latter

Homemade Greek Soy Yogurt

This is best made overnight, so you don’t disturb the pot while it is working. It takes 9–10 hours.

Makes about 2 cups

1 quart container unsweetened soy yogurt (Trader Joe’s)

1 teaspoon probiotic powder

Place either 2 pint or 4 1/2 pint glass jars inside your instant pot.

Place the milk and the probiotic powder into the blender. Pulse to mix. This can also be done by whisking some of the milk with the powder and then incorporating this into the rest of the milk.

Pour the milk into the jars.

Secure the lid on the instant pot. Press the Yogurt button on the pot and select 9 or 10 hours. Leave it alone.

When the yogurt is done, to create a thicker consistency, you can drain it using a seive in a coffee filter over a bowl to catch the excess liquid. Do it as shown and let it drain in the fridge if you are going to be away, otherwise it can be done on the counter for a couple of hours.

Place your glass mason jars inside the pot — either 1/2 ( 1 cup) or 1 pint (2 cups) jars
This yogurt is undrained, straight from the Instant Pot, so it is not greek-style … YET!
